Rainbow Cupcakes



Thanks mymilwaukeemommy for the great idea and story!!!!  I am going to give this a shot this year!!
I made these yummy cupcakes last year for St. Patrick's Day.

All I did...
Make a vanilla cupcake recipe (I used a box mix)
Separate made mix into 6 bowls and add food coloring to each bowl-red, orange, yellow, green, blue and purple.  Mix food coloring into the separated batter.

Get your cupcake pans ready and spoon the colors into the liners, until 3/4 full like recipe suggests.  Remember the rainbow is ROY G BIV so your purple should go in first if you want it to look like mine.


This is a little tedious but it is so much fun!  My kiddos at work were astonished at how neat the cupcakes were!  I used chocolate frosting-that is what I like, of course you can get really fancy and decorate them with whatever you would like.

Did you know you can freeze cupcakes?  Well you can!  That is what I did and they were still very moist and yummy.

I've done these before, and they're always a hit! For really vivid colors use the gel food coloring rather than the liquid.
