Grimmway Farms Carrots-Check Out This Awesome Recipe Using Grimmway Carrots!

Grimmway Farms has a variety of carrots available for purchase besides the standard baby carrots.  They also have the carrot chips as pictured above, carrot stixx, carrot dippers, crinkle cut coins, microwaveable carrots, shredded carrots and whole carrots.  Why do I feel a little like I am Forest Gump talking about shrimp?  I am impressed that they sell the bags in a variety of cuts because they are a quick and easy snack for my sons and the fact that I can change up the shapes makes them less boring.  Not to mention the fact that I don't have to do the cutting!!!

Of course, I decided since it is around the holidays to try this one because it involves pumpkin and my boys love anything pumpkin. This recipe used Grimmway Farms shredded carrots.  My boys loved them!

Pumpkin Carrot Cupcakes

Cook Time: 18-20 minutes  Serves: Makes 24 cupcakes
Ingredients
For the cupcakes:
1 10-ounce bag of Grimmway Farms shredded carrots
1/4 cup orange juice
1 box spice cake mix
3 eggs
1 cup canned pumpkin
1/3 cup vegetable oil
1/3 cup water
For the icing:
1 stick of butter, softened
1 8-ounce package of cream cheese, softened
1 pound confectioners sugar
Instructions
In a small saucepan, add the orange juice and shredded carrots. Heat over medium heat and cover for 15 minutes. Remove from heat and puree in a food processor.
Preheat the oven to 350 degrees.
Meanwhile, in a large mixing bowl, blend the cake mix, eggs, pumpkin, oil and water with a hand mixer. Fold in the carrot puree and fill 3/4 way full, 24 prepared muffin cups. Bake for 18-20 minutes. Cool on a wire rack and once completely cool, ice with cream cheese icing (below). Garnish with shredded carrots.
For the icing:
With a hand mixer, mix the butter and cream cheese until well combined. Slowly add the confectioners sugar until thoroughly mixed.
