Simply Potatoes Review and Giveaway

My boys headed back to school today, and while they love to eat breakfast at school, on their first day they do want to eat at home.

 Walmart only had two varieties of Simply Potatoes for me to try.  I came home with shredded hashbrowns (my favorite anyways!) and looked up a recipe that called for hashbrowns.  My oldest boy loves ham, so I decided to go with the Southwestern Ham and Cheese Party Potatoes.

Ingredients:

1 can (10 3/4 ounces) fiesta cheese soup

1 can (10 3/4 ounces) cream of chicken soup

1 cup sour cream

1/2 cup butter or margarine, melted

2 packages Simply Potatoes® Southwest Style Shredded Hash Browns

2 cups cubed fully cooked ham

1 1/2 cups crushed round buttery crackers (about 36 crackers; 1 sleeve)* 

 Instructions:

1. Heat oven to 350°F. Spray 13x9 glass baking dish with nonstick cooking spray. In very large bowl stir together fiesta cheese soup, cream of chicken soup, sour cream and 1/4 cup melted butter; mix well. Stir in Simply Potatoes and ham. Spread into baking dish.

2. In small bowl stir together remaining 1/4 cup melted butter and crushed crackers. Sprinkle crackers evenly over top of Simply Potatoes.

3. Bake, uncovered, 50 to 55 minutes or until edges are bubbly and center is heated through.

I love making potato dishes, but absolutely hate shredding the potatoes.  I take it as an extreme insult that they do not sell the Salad Shooter anymore.  Anyways, I don't have time in the morning before school to peel and shred potatoes!!  Since I have used Simply Potatoes before, I already know how much time they save, so I knew how easy this dish was going to be!  For this dish, I just had to mix all of the ingredients together, which included me pouring the potatoes in!  It took me more time to find some of the ingredients than it did for me to mix up the casserole!

I don't think anyone can go wrong with cheese and potatoes.  It was a nice twist to add the spicier soup. ( I bet you could use a regular cheese soup instead if you aren't spicy!!!)  My boys enjoyed this for breakfast, and I think I will make it for supper one night so my husband can try it.
